  1. 1 lb. garlic sausage/kielbasa

  2. 1 1/2 lbs. green bean s, trimmed Vinaigrette :

  3. 1 T. red- wine vinegar

  4. 1 large shallot , cut lengthwise in half and then into paper thin slices Fine sea salt and ground black pepper

  5. 1/4 cup olive oil

  6. 4 large hard-boiled egg s, quartered

  1. Place sausage in medium saucepan and cover with water by 1”. Bring to boil, reduce heat and simmer until cooked, about 20 minutes (10 for kielbasa). Remove from heat, leave in water to stay warm. Steam beans until tender, about 15 minutes. Make vinaigrette in large bowl, adding oil slowly so that vinaigrette emulsifies. Tip steamed beans into boil with vinaigrette and toss until coated. Season well with salt and pepper. Slice sausage on diagonal and add to beans, tossing thoroughly. Arrange egg quarters on top of salad. Serve warm or room temperature.
