  1. 1 cup Uncle Ben's Converted Brand Rice

  2. 1 can (about 3 ozs.) mild green chilies, drained and chopped

  3. 3 cups cubed cooked turkey

  4. 1 12-oz. can Mexican-style corn with sweet peppers, drained

  5. 1 10-oz. can enchilada sauce

  6. 3/4 tsp. salt

  7. 1 cup dairy sour cream

  8. Makes 6 servings

  1. Method :

  2. Prepare rice according to package directions. Reserve 1 Tbs. chilies for garnish.

  3. Combine remaining chilies, turkey, corn, enchilada sauce, salt and cooked rice in large bowl.

  4. Spoon into greased baking dish 12 x 7 1/2 X 2 inches. Cover and bake at 350°F until hot, about 25 minutes.

  5. Spoon sour cream down center; garnish with reserved chilies.
