  1. West Indian Bread Pudding

  2. 5 cups. French bread cubes, about 6 ozs.

  3. 1/3 cup golden raisins

  4. 1 cup mashed very ripe banana, about 2 large

  5. 1/4 cup plus 2 Tbsp. honey

  6. 1 1/4 cups. skim milk

  7. 1 cup egg substitute

  8. 1/4 tsp. ground nutmeg

  9. 1 tsp. vanilla extract

  10. Combine the bread cubes and raisins. In a separate bowl, combine

  11. the remaining ingredients, and pour over the bread cubes. Stir

  12. gently to mix, and let the mixture sit for 10 minutes.

  13. Coat a 1 1/2 quart casserole dish with nonstick cooking spray.

  14. Spread the bread mixture evenly in the dish, and bake at 350 degrees

  15. 50 to 60 minutes, or until a sharp knife inserted in the center

  16. comes out clean. Let stand for 10 minutes. Serve warm, and refrigerate any leftovers. Makes 9 servings.
