  1. 1 lb 454g / 16oz Bulk pork sausage

  2. 1/2 cup 31g / 1.1oz Chopped onion

  3. 1 1/2 cups 219g / 7.7oz Shredded cheddar cheese - divided

  4. 1 Frozen chopped spinach - thawed and drained

  5. 1 Sliced mushrooms - drained

  6. 12 Eggs

  7. 2 cups 474ml Heavy cream

  8. 1/4 teaspoon 1 1/3ml Ground nutmeg

  1. In a skillet, cook sausage and onion until the sausage is browned and the onion is tender; drain. Remove from the heat; stir in 1 cup cheese, spinach and mushrooms.

  2. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. In a bowl, beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture.

  3. Bake, uncovered, at 350F for 35-40 minutes or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand 5 minutes before cutting.
