  1. 2 C. all purpose flour

  2. 1 C. whole wheat flour

  3. 1 tsp cinnamon

  4. 1 tsp baking soda

  5. 1/4 tsp salt

  6. 1 1/2 C. vegetable oil

  7. 2 C. sugar

  8. 3 large egg s, room temperature

  9. 3 C. (3 lg) golden delicious apple s, cut in 1-inch pieces

  10. 1 C. coursely chopped walnut s

  11. 3 Tbls apply flavoured Brandy Icing:

  12. 1 pound (2 8oz packages) cream cheese, softened slightly, cut into pieces

  13. 1/2 C. (1 stick) unsalted butter , softened slightly, cut into pieces

  14. 1 C. cold Caramel , plus extra (about 1/4 cup) for decroating Garnish: Coursely chopped walnut s

  1. Preheat oven to 325 Grease and lightly flour two 9x2 inch round cakes pans, then line the bottoms with waxed paper Cake: In large bowl mix together the flours, cinnamon, baking soda and salt. In large bowl, on medium speed, beat the oil with the sugar until smooth, about 3 minutes. Add the eggs one at a time and beat until light, about 1-2 minutes. Add the dry ingredients in 3rds, beating after each addition until smooth. The batter will be extremely thick and doughlike. With a spoon, stir in the apples, walnuts and Brandy until just blended. Divide the batter between the 2 cake pans and bake for 45-55 minutes. Cool for 10 minutes the remove from pans onto wire rack. Icing: In a medium bowl on medium speed, beat the cream cheese and butter until smooth, about 3 minutes. Gradually add in the Caramel and beat until well incorporated. When the cake has cooled, ice between layers, then ice the top and sides of cake. Drizzle remaining Caramel over top of cake, and using a small knife, swirl Caramel into icing, forming a decorative pattern. Garnish with walnuts.
