  1. 1 1/2 cups Kellogg's All-Bran®

  2. 1 cup skim milk

  3. 1/2 cup unsweetened applesauce

  4. 1 egg

  5. 1 tablespoon lemon zest, or zest of one lemon

  6. 1 large lemon, juiced

  7. 1/2 cup brown sugar

  8. 1 teaspoon vanilla extract

  9. 1 cup all-purpose flour

  10. 1 teaspoon baking soda

  11. 1 teaspoon baking powder

  12. 1/4 teaspoon salt

  13. 2 tablespoons poppyseeds

  1. Preheat oven to 350 degrees and line a muffin tin or spray with nonstick spray. In a bowl, mix together All-Bran and milk, letting stand for 10 minutes. In another large bowl, mix together applesauce, egg, brown sugar, vanilla, lemon juice from the lemon, and lemon zest. Mix in the milk and All-Bran mixture. Whisk together all-purpose flour, baking soda, baking powder, salt, and poppyseeds and stir into the bran mixture until just blended. Divide into muffin tins and bake for 12 to 18 minutes or until an inserted toothpick comes out clean. Once mostly cooled, glaze with powdered sugar mixed with milk and a slice of fresh lemon if desired.
