  1. 6 oz 170g Monterrey jack cheese - shred

  2. 6 oz 170g Mozzarella or Oaxaca cheese

  3. 1/2 cup 73g / 2.6oz Shrimp - cooked and chopped

  4. 2 teaspoons 10ml Fresh oregano - minced

  5. Poblano chili strips - for ga

  6. Minced green onions - for gar

  7. Toasted pine nuts - for garni

  8. 2 tablespoons 30ml Cognac

  9. 6 Flour tortillas

  1. Divide shrimp equally into 6 individual ramekins.

  2. Top with shredded cheese and sprinkle with fresh oregano.

  3. Place in preheated 350F oven and bake just until cheese has melted.

  4. Place on heated serving plates and garnish with chili strips, minced green onions, and toasted pine nuts.

  5. Drizzle each with teaspoon Cognac and drape with a hot flour tortilla. Serve immediately.
