  1. 2 (16-ounce) cans corn, drained

  2. 6 large eggs

  3. 1 small yellow onion, chopped

  4. 1 small bunch parsley, minced

  5. 1 cup milk

  6. 1/2 pound Swiss cheese, grated

  7. 1 medium sweet red pepper, diced

  8. 1 medium green bell pepper, diced Salt and pepper

  1. Combine all ingredients; pour into greased 2 1/2-quart casserole and bake in 350°F (175°C) oven for 1 1/2 hours, or until knife inserted comes out clean.
