  1. 1 1/2 cups 93g / 3 1/3oz Flour

  2. 1/4 cup 27g / 1oz Cocoa powder

  3. 1 teaspoon 5ml Baking powder

  4. 1 teaspoon 5ml Baking soda

  5. 1/3 cup 65g / 2 1/3oz Sugar

  6. 2 cups 474ml Buttermilk

  7. 1/2 cup 118ml Vegetable oil or - melted butter

  8. 2 cups 396g / 13oz Eggs - separated (large)

  9. 1 teaspoon 5ml Vanilla extract

  10. 1 Cream of tartar

  11. 1 cup 146g / 5.1oz Chopped pecans -

  12. Ice cream - for accompaniment

  1. Sift together flour, cocoa, baking powder, baking soda, and sugar. Make a well in center of sifted dry ingredients.

  2. In a separate bowl mix buttermilk, oil, egg yolks, and vanilla. Pour into the well and mix with dry ingredients.

  3. Beat egg whites with cream of tartar until soft peaks form. Gradually fold into batter, one third at a time. Fold in pecans (if used).

  4. Cook in waffle iron according to manufacturer's instructions. Top with ice cream.

  5. Makes 4 large waffles.
