  1. 1 avocado, peeled and pitted

  2. 1 cup mayonnaise

  3. 2 tablespoons green onion

  4. 1 garlic clove

  5. 1 tablespoon lemon juice

  6. 1 teaspoon tarragon, fresh or dried

  7. 5 anchovies

  8. Salt and pepper, to taste

  9. 1. In a KitchenAid blender, combine the avocado, mayonnaise, green onion, garlic, lemon juice, tarragon, anchovies, salt and pepper. Process until smooth, adding water if necessary.

  10. 2. Chill for 24 hours before serving.
