  1. 1 cup port wine

  2. 1 cup soy sauce

  3. 1/2 cup olive oil

  4. 1 tsp pepper

  5. 1 tsp dried whole thyme

  6. 1/2 tsp hot sauce

  7. 2-4 cloved garlic , pressed

  8. 1 bay leaf

  9. 4-6 lb beef tenderloin

  1. Combine ingredients in a ziplock bag and add roast. Marinate in regrigerator at least 8 hours, preferably overnight. Place meat on roasting rack in roasting pan and cook at 425 degrees. Use your cookbook guidelines for time per pound for a beef tenderloin and check with a meat thermometer.
