  1. 1 Beets - sliced

  2. 1/2 cup 99g / 3 1/2oz Sugar

  3. 2 1/4 teaspoons 11ml Dry mustard

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 3/4 cup 177ml Cider vinegar

  6. 1 teaspoon 5ml Celery seeds

  7. 1/2 cup 31g / 1.1oz Onion - finely chopped

  1. Drain beets, reserving 1/2 cup juice; set aside.

  2. Combine sugar, dry mustard, and salt in small saucepan; stir well.

  3. Add beet juice and vinegar; bring to a boil over medium heat.

  4. Remove from heat; stir in celery seeds. Combine beets and chopped onion.

  5. Add the vinegar mixture, tossing gently.

  6. Cover and refrigerate salad 8 hrs. or overnight.
