  1. 1 1/2 pound(s) Chicken Breasts , I prefer organic chicken

  2. 2 cup(s) Bread Crumbs

  3. 2 cup(s) Unbleached Flour , Season with the salt and pepper

  4. 2 whole(s) Eggs

  5. 2 pinch(es) Salt , I like to use Kosher

  6. 2 pinch(es) Ground Black Pepper

  7. 6 tablespoon(s) Unsalted Butter , You can replace with vegetable or olive oil if you like

  8. 4 sprig(s) Parsley , Give or take, mostly for garnish

  9. 1/4 cup(s) Parmesan Cheese , Add this to bread crumbs

  1. Clean chicken breasts. Then, between two sheets of plastic wrap, pound the chicken until its about 1 inch thick. Preheat oven to 350 degrees.

  2. After pounding the chicken, whip eggs and a little water to them. Place eggs,flour(with salt and pepper),and bread crumbs on plates or shallow bowls.

  3. Coat the chicken with flour, then dip in the egg wash, then coat with bread crumb-cheese mixture. Place all the breasts on a plate with wax paper and let them chill for about 15-30mins so the bread crumbs can stick well.

  4. Place butter in a large, non stick, skillet and place on medium-high heat. Once butter starts to bubble, add the chicken and allow it to brown.

  5. Brown both sides of the chicken, then place on cooking sheet and allow the chicken to fully cook for about 10 mins or so (maybe less, this is depending on the doneness after they have browned)

  6. Place chicken on a plate, finely chop the parsley, and place it on top of the chicken.
