  1. 2 Ibs cod

  2. 5 tablespoons flour

  3. 3 3/4 cups milk

  4. 3 tablespoons grated cheese

  5. Salt and cayenne pepper

  6. 1 1/2 cups uncooked rice

  7. 3 tablespoons butter

  8. 1 small onion

  9. 1 tablespoon curry powder

  1. Directions Cook fish, drain and break into small pieces.

  2. Melt butter, stir in flour, cook 3 minutes.

  3. Pour in milk and stir till smooth and thick, add cheese, salt and pepper.

  4. Simmer for 5 minutes with lid on.

  5. Cook rice in salted water.

  6. Rinse in cold water to separate grains.

  7. Melt butter in pan, fry onion, add rice, curry and salt.

  8. Stir constantly until rice is lightly browned.

  9. Pack into casserole, fill with cod and pour over cheese sauce.

  10. Place in oven to reheat when required.
