  2. 8 ounces uncooked spiral pasta

  3. 8 ounce package American cheese slices

  4. 1/2 cup milk

  5. 2/3 cup thick chunky salsa

  6. 15 ounce can black beans, rinsed and drained

  7. 1 cup shredded hot pepper jack cheese

  8. 2/3 cup diced tomato

  9. 3 tbsp. sliced green onion

  10. 1 tbsp. chopped fresh cilantro leaves

  1. Preheat the oven to 350 degrees. Grease the inside of a 1 1/2 quart casserole dish. Heat a large saucepan of lightly salted water to a boil. Add the pasta and boil until just tender, stirring frequently. Drain the cooked pasta well and transfer to a large bowl. Meanwhile, combine the milk and American cheese slices in a medium saucepan over medium low heat. Cook, stirring occasionally, until the cheese is melted and smooth. Stir in the salsa. Pour the sauce mixture over the pasta and stir to blend. Pour the macaroni and cheese mixture into the prepared dish. Spoon the black beans evenly over the pasta and sprinkle with the pepper jack cheese. Bake about 25 to 30 minutes until the pasta is heated through and bubbly. Let stand a few minutes. Sprinkle the tomatoes, green onions and cilantro over the macaroni and cheese and serve immediately.
