  8. 1/3 c Shredded mozzarella cheese

  9. 1 tb Finely chopped green onion

  10. (with top)

  11. 2 Eggs

  12. 1/3 c Milk

  13. 1/4 ts Salt

  14. 6 Drops red pepper sauce

  15. 2 tb Finely chopped, fully

  16. Cooked smoked ham

  17. Cornmeal Quiche Shells:

  18. 1/3 - cup all-purpose flour,

  19. 1 tablespoon plus

  20. 1/3 teaspoon salt;cut tablespoon plus 2 teaspoons shortening

  21. thoroughly.Sprinkle in 5 - 6 teaspoons water,tossing

  22. with fork until all flour is moistened and pastry

  23. cleans side of bowl.Gather pastry into ball.Divide

  24. into halves.Press each half firmly against bottom and side of 2 10 ounce quiche dishes or custard cups.Prick

  25. bottom and side thoroughly with fork.Place dishes on

  26. inverted saucers in microwave oven.Microwave uncovered

  28. 2 minutes;rotate dishes

  29. turn.Prick any bubbles with fork. Microwave uncovered

  30. 1 1/2 to

  31. minutes. Sprinkle cheese and onion in shells.Beat

  32. eggs,milk,salt and pepper sauce with fork in 2 - cup

  33. measures;stir in ham. Microwave uncovered on medium

  34. 385 watts

  35. 2 to 3 minutes,stirring

  36. after 1 minute.Stir;pour into shells Place shells on

  37. inverted saucers in microwave oven. Microwave

  38. uncovered on medium high (385 watts) 2 minutes; turn

  39. dishes 1/2 turn.Microwave uncovered until center is

  40. 2 to 3 minutes.Serves
