  1. oil, for deep-frying

  2. 1/3 cup (85ml) cornmeal

  3. 1/4 cup (60ml) all-purpose flour, sifted

  4. 1/2 tsp (2 1/2ml) pepper

  5. 1 egg

  6. 3 tbsp (45ml) milk

  7. 7 chicken livers, cleaned and cut into 3/4 inch (2cm) pieces

  8. SOUR CREAM DIP

  9. 1 cup (250ml) sour cream

  10. 3 tbsp (45ml) grated onion

  11. 1/2 tsp (2 1/2ml) salt

  12. 1/4 tsp (1ml) Worcestershire sauce

  13. 1 tsp (5ml) Dijon mustard

  14. 4 drops Tabasco or chili pepper sauce

  1. Method :

  2. Combine all dip ingredients, cover and refrigerate unti ready to serve.

  3. Put 1 1/2 inch (3.5cm) oil in an electric frying pan or deep fryer. Carefully heat oil to 375F (190C) while preparing chicken livers.

  4. Combine cornmeal, flour and seasonings. Mix egg with milk. Dip each piece of liver into seasoned cornmeal, then into egg mixture and then into cornmeal again.

  5. Deep-fry for 2 minute or until golden brown. Serve hot on toothpicks with dip.
