  1. 2 1/2 cups medium grain rice

  2. 4 medium desiree potatoes, boiled, mashed

  3. 5 eggs, lightly beaten

  4. 1 cup finely grated parmesan

  5. 1 tablespoon finely chopped parsley

  6. 2 garlic cloves, crushed

  7. 2 cups dried breadcrumbs

  8. Vegetable oil, for deep-frying

  9. Tomato chutney, to serve

  1. Cook rice according to packet instructions. Drain and rinse with cold water.

  2. In a bowl, combine cooled mashed potato, rice, eggs, parmesan, parsley and garlic. Season well.

  3. Roll mixture into 7cm-long oval-shaped croquettes. Toss in breadcrumbs.

  4. Heat oil in a deep saucepan on high. Deep-fry croquettes for 2-3 minutes, until golden. Drain on paper towel.

  5. Serve with tomato chutney.
