  1. 4 Tomatoes - peeled, seeded and (large)

  2. Cubed 4 Green bell peppers - grilled, - seeded

  3. And diced 1 Cucumber - peeled, centre

  4. Core removed and diced

  5. 1 tablespoon 15ml Chili peppers - seeded and dice

  6. Salt and pepper

  7. 1 tablespoon 15ml Lemon juice

  8. 3 tablespoons 45ml Olive oil

  9. 2 tablespoons 30ml Parsley - chopped

  10. 1/4 teaspoon 1 1/3ml Cumin

  11. 2 Garlic cloves - chopped

  1. Combine all the ingredients in a mixing bowl and blend gently.

  2. Refrigerate one hour before serving.
