    1. 2 tb Granulated Sugar

    2. 2 tb Lemon Juice

    3. 5 Peaches, peeled, sliced

    4. 1 Bottle of Champagne

    1. Servings: 4 Place 4 of the slices peaches in a bowl, sprinkle with sugar and lemon juice, then arrange slices decoratively on 4 serving plates.

    2. Make "bellinis" by pureeing the remaining peach in a food processor or blender and placing an equal amount of the puree in each of 4 Champagne flutes or tall wine glasses.

    3. Pour Champagne over the pureed peaches in each glass.

    4. Serve sliced peaches with the "bellinis".

    5. Serves 4.
