  1. Country pumpkin applesauce Muffins

  2. 2/3 cup solid vegetable shortening

  3. 2 2/3 cups sugar

  4. 4 eggs

  5. 1 cup applesauce , any style

  6. 1 cup pumpkin canned OK (not pumpkin pie filling )

  7. 2/3 cup apple juice

  8. 3 1/3 cups all-purpose flour

  9. 2 teaspoons baking soda

  10. 1/2 teaspoon baking powder

  11. 1 teaspoon salt

  12. 1/2 teaspoon nutmeg

  13. 1 teaspoon cinnamon

  14. 1/2 teaspoon mace

  15. 1 cup finely chopped walnuts

  1. Preheat the oven to 350 degrees.

  2. Grease the cups of muffin tins.

  3. Cream together the shortening and sugar.

  4. Add the eggs one at a time.

  5. Stir in the applesauce and pumpkin until well mixed.

  6. Next add the apple juice, flour, baking soda, and baking powder. Don’t over mix.

  7. When just smooth, add the salt, nutmeg, cinnamon, and mace.

  8. Stir in the walnuts.

  9. Pour into the prepared muffin tins.

  10. Bake for 20 minutes, until a toothpick inserted in the center comes out clean. ==
