  7. 1/2 c Milk -- scalded

  8. 1 1/2 ts Salt

  9. 1/2 c Water -- room temperature

  10. 3 c Flour --

  11. 1/4 c Shortening

  12. 1 tb Sugar

  13. 1 pk Yeast

  14. te cornmeal

  15. Combine milk, shortening, salt and sugar. Cool to

  16. lukewarm by adding water. Dissolve yeast as directed

  17. on package. Add to milk mixture and stir well. Add

  18. flour and mix until a soft dough is formed. Roll out

  19. 1/4 inch thickness. Cut with a

  20. 1/2 inch round cutter. Place on a baking sheet that

  21. has been sprinkled with 2 tablespoons cornmeal.

  22. Sprinkle tops of muffins with additional 2 tablespoons

  23. cornmeal.

  24. 85-90 degrees

  25. in bulk-about 1 hour.

  26. Bake slowly on a hot, ungreased griddle until brown,

  27. about 7 minutes on each side. Split muffins, toast and serve with butter and marmalade.
