  1. 1 1/2 lbs 681g / 24oz Ground beef (pretty lean)

  2. 1 Taco seasoning mix

  3. (Taco Bell, Ortega, etc.)

  4. 1 Green onion - finley diced

  5. 2 Eggs

  6. 1 Garlic clove - minced

  7. 1 Sharp cheddar cheese - cut small cubes

  1. Preheat the oven to 425 degrees.

  2. Beat eggs and mix all ingredients except the cheese together. Mold a tablespoon of meat around a cube of cheese to form a small shaped meatball.

  3. Repeat with all meat. Place on edged cookie sheet (sprayed with Pam) and bake at 425 degrees for 7 to 10 minutes or until meat is done and cheese has melted.

  4. This recipe yields 10 to 15 servings; less than 1 carb gram per meatball.
