  1. 1 small red onion, finely diced

  2. 2 (15-ounce) cans black beans , drained and rinsed

  3. 1 large avocado, peeled, seeded and diced

  4. Salt and freshly ground black pepper

  5. 1 mango, peeled, seeded, and diced

  6. 1/2 cup pineapple chunks, fresh or canned, if canned, drained

  7. 2 limes, juiced

  1. In a large glass bowl, combine all ingredients. Stir well with a spoon. Cover with plastic wrap and chill until serving time.
