  1. Tomato Sauce:

  2. 2 tablespoons butter

  3. 1 small onion, finely chopped

  4. 2 tablespoons all-purpose flour

  5. 1 (14 1/2-ounce) can stewed tomatoes

  6. Fried Crabs:

  7. 12 medium soft-shell crabs, cleaned

  8. 2 eggs, beaten

  9. 1/4 cup milk

  10. 3/4 cup bread crumbs

  11. 3/4 cup all-purpose flour

  12. vegetable oil

  13. Salt and pepper to taste

  1. Prepare Tomato Sauce: In a medium saucepan over low heat, melt butter. Add onion, cook until slightly softened, about 3 minutes. Add flour, stir until blended. Add tomatoes, season with salt and pepper; simmer until thickened, stirring constantly. Keep warm.

  2. Prepare Fried Crabs: Rinse crabs under cold running water. Pat dry with paper towels. In a pie plate, combine eggs and milk, season with salt and pepper. In a separate pie plate, combine flour and bread crumbs. Dredge crabs in egg mixture and roll in flour mixture.

  3. Place crabs in a single layer in fry basket and cook in deep, hot oil at 375 degrees for 4 minutes or until brown. Drain on paper towels. Pour tomato sauce over crabs and serve.
