  1. 1 lb 454g / 16oz Green beans - trimmed

  2. Salt to taste

  3. 1/2 teaspoon 2 1/2ml Turmeric

  4. 1 tablespoon 15ml Corn oil

  5. 1 tablespoon 15ml Chana dal

  6. 1 tablespoon 15ml Urad dal

  7. 1/2 tablespoon 7 1/2ml Mustard seeds

  8. 1/2 tablespoon 7 1/2ml Cumin seeds

  9. 3 Red chile peppers - crushed

  10. 1/2 tablespoon 7 1/2ml Curry leaves -

  11. 2 tablespoons 30ml Coconut - shredded, unsweetened

  1. Cut beans, crosswise, into 1/4 inch pieces. Boil with salt and turmeric until tender, about 10 minutes. Drain and set aside. Heat oil in a small saucepan or skillet. When oil is hot, lower heat and add chana dal, urad dal, mustard seeds, cumin, chile peppers and, if using, curry leaves. Stir, cooking until dal turns golden and mustard seeds pop. Remove from heat, add coconut, stir for a minute and mix into green beans. Serve warm.
