  1. 6 Asparagus sprigs, diced discard tough ends

  2. 2 mediums Potatoes; peeled grated

  3. 3 tablespoons Butter -

  4. 1 small Onion; diced

  5. 1 clove Garlic; crushed

  6. 3 Eggs;

  7. 3 tablespoons Diced ham;

  8. 3 tablespoons Cheddar cheese; grated

  9. 1 tablespoon Green onions; chopped

  10. 1 6-1/2 oz pasty crust; prepared

  1. Melt butter or margarine, add onion and garlic and fry until onions are transparent. Add diced asparagus and fry 2 more minutes. Add grated potatoes, whisk in eggs, ham, cheese and chives. Add salt and pepper if desired. Pour into prepared pastry crust and bake 350 degrees for 1 hour, garnish with diced tomatoes. Served 6. Source: The San Diego Union, Food Section, Feb.
