  1. 8 slices French or Italian bread -- 1/2-inch thick salt freshly ground black pepper

  2. 8 slices goat cheese -- 1/4-inch thick

  3. 1 tablespoon fresh thyme leaves

  1. Preparation : Preheat the oven to 350F. Brush both sides of the bread slices with olive oil and sprinkle with salt and pepper. Place the bread on a baking sheet and toast in the oven for about 4 minutes, turning once, until lightly browned. Top each crouton with a slice of goat cheese and sprinkle with thyme, salt and pepper. Set aside.
