  1. HERBED FILLED TOMATOES

  2. 6 large firm tomatoes

  3. 1/4 cup finely chopped parsley

  4. 4 Tbs finely chopped fresh basil

  5. 1 Tbs finely chopped thyme

  6. 3 Tbs chopped shallots or spring onions

  7. 3 cloves garlic, crushed

  8. salt and pepper to taste

  9. 1/4 - 1/2 cup fresh breadcrumbs

  10. oil

  11. lemon wedges to garnish

  12. Prepare the tomatoes for stuffing, reserving the pulp. Combine

  13. the pulp with the herbs, shallots and garlic. Season to taste,

  14. then bind with sufficient breadcrumbs to make a stiff paste. Spoon

  15. the mixture into each tomato shell and brush with oil. Arrange

  16. the tomatoes in an oiled, shallow ovenproof dish and cover with a

  17. 180 C for 30 minutes. Remove

  18. 200 C and bake a further

  19. 5 minutes.

  20. Serve garnished with lemon wedges.
