  1. Ingredients (serves 8)

  2. 8 pavlova nests

  3. 1 large mango, peeled, diced

  4. Double cream, to serve

  5. Passionfruit curd

  6. 1 egg

  7. 1 egg yolk

  8. 1/4 cup caster sugar

  9. 2 passionfruit, halved

  10. 50g butter, chopped

  1. Make passionfruit curd Place egg, egg yolk and sugar in a heavy-based saucepan. Whisk to combine. Add 1/4 cup passionfruit pulp and butter. Place over medium heat. Cook, stirring with a wooden spoon, for 7 to 8 minutes or until mixture coats the back of spoon. Remove from heat. Stand for 5 minutes. Pour into a bowl. Cover surface with plastic wrap. Cool completely.

  2. Spoon 1 tablespoon passionfruit curd into each nest. Top with cream and mango. Serve.
