  1. 1/2 lb Boneless pork butt; cut in

  2. -1 1/2" cubes

  3. 8 Medium fresh Pacific oysters

  4. -(OR 1 10 oz. jar)

  5. 4 Green onions

  6. 1 1/2 c Warm water

  7. 1 tb Brown bean sauce

  8. 1 ts Dark soy sauce

  9. 1 ts Fresh ginger; minced

  10. 1 Piece dried orange peel

  11. 2 tb Medium sherry

  12. Cornstarch paste

  13. 1/2 c Peanut oil

  14. Chinese or Italian parsley

  15. -for garnish

  16. 1/4 c Medium sherry

  17. 2 ts Thin soy sauce

  18. 2 Cloves garlic; minced

  19. 1 ts 5-spice powder

  20. 1 ts Lemon juice

  1. Marinating: Combine marinade ingredients in bowl large enough to hold pork, mixing well.

  2. Add pork, cover, and marinate at room temperature for 1 hour.

  3. Braising: Drain pork, taking care to remove pieces of garlic.

  4. Heat oil in wok until it begins to smoke.

  5. Fry pork cubes, a few at a time, until brown and crusty.

  6. Do this quickly to sear meat without cooking it through.

  7. Drain in Chinese strainer or on paper towel.

  8. Strain and reserve cooking oil.

  9. Clay Pot: In cool clay pot, combine water, bean sauce, dark soy, minced ginger, dried orange peel, and sherry.

  10. Bring to boil, then add braised pork cubes.

  11. Reduce heat, cover pot, and simmer for 30 minutes.

  12. Meanwhile, wash and trim green onions, cut into 2" sections.

  13. Drain oysters.

  14. When pork has simmered 30 minutes, add onions and oysters.

  15. You can stop the dish before adding oysters and onion.

  16. Cover and cook at medium heat for 15 minutes more.

  17. Turn up to boil, dribble in cornstarch paste to make light gravy.

  18. Serve with garnish of parsley.
