  1. TOFU CHEESECAKE

  2. 2 cups granola

  3. 1/3-1/2 cup vegetable margarine

  4. 3/4 soy milk

  5. 2-1/2 cups firm tofu

  6. 1/2 cup vegetable oil

  7. 1 tsp vanilla extract

  8. 1 tsp almond extract

  9. 2 tsp arrowroot

  10. Fruit for topping Grind the granola until very fine. Melt the margarine and mix in

  11. the granola crumbs. Spread mixture in a greased flat tin and bake

  12. 5 minutes.

  13. Put the milk, tofu, oil, vanilla and almond extracts and arrowroot

  14. into a blender and blend thoroughly until smooth. You may have to

  15. break this up into smaller batches and blend separately.

  16. Remove piecrust from the oven and pour in the filling.

  17. 350 degree oven for 20 minutes. Remove and set aside to

  18. cool thoroughly.

  19. Top the cheesecake with fruit topping, and set in refrigerator to

  20. chill to desired consistency before serving.
