  2. NECTARINE GINGER CHUTNEY

  5. 3/4 lb Fresh ginger -- peeled and Minced 6 c Granulated sugar

  6. 3 c Cider vinegar

  7. 6 Cloves garlic -- peeled and Mashed

  8. 8 lb Nectarines (about 24 medium)

  9. Pitted and cubed

  10. 2 md Onions -- chopped

  11. 1 1/2 c Lemon juice

  12. 1 c Golden raisins

  13. 1 c Raisins

  14. Cover ginger with water in a saucepan and bring to a

  15. boil, turn down heat and simmer until tender, 35-40

  16. minutes. In a large non-aluminum pot, mix ginger

  17. water, ginger, sugar, vinegar, and garlic. Bring to a

  18. boil and add remaining ingredients. Cook until thick,

  19. about 1 1/2 hours.
