  1. 1/2 cup clarified butter

  2. Kosher salt to taste

  3. 2 tablespoons spicy curry powder

  4. 1 pound raw shrimp, peeled and deveined

  5. 1 cup Daisy Sour Cream

  6. 1 teaspoon ground cumin

  7. 1 teaspoon ground coriander

  8. 1 teaspoon ground cayenne pepper

  9. 1/2 cup cucumber, minced

  10. 4 cups mixed greens

  11. 2 tablespoons mint, coarsely chopped

  12. 2 cups seedless watermelon, chopped and drained

  13. 8 slices pita bread, sliced into 2 inch by 2 inch pieces

  1. In a large, shallow bowl, mix together the butter, salt and curry powder. Add the prawns and toss to coat. Set aside.

  2. In a medium bowl, make the raita by whisking together the sour cream, cumin, coriander, cayenne pepper and cucumber.

  3. In a medium bowl, toss together the mixed greens, mint and watermelon.

  4. Heat a large skillet to high heat and add the shrimp. Cook for 3 minutes or until just done.

  5. Lay pita slices out on a large serving platter and add equal amounts of greens mixture, shrimp and raita to each. Serve.
