  1. History: This appetizer has been a hit in North Carolina. It came from a friend in Texas. You may want to lighten up on the jalapenos if you weren't raised in Texas.

  3. Preparation Time: about 30 minutes plus refrigerating overnight

  4. Amount Measure Ingredient

  5. 1 lb. package Velveeta cheese

  6. 8 oz. package cream cheese, at room temperature

  7. 4 green onions, chopped fine

  8. 1 small can jalapenos, drained, seeded and chopped fine

  9. garlic powder

  10. Cajun seasoning

  11. paprika

  12. With rolling pin, roll Velveeta into rectangle between 2 pieces of waxed paper. Mix cream cheese, onions and jalapenos, spread on top of Velveeta. Sprinkle on garlic powder and Cajun seasoning. Roll up Velveeta into a log inside the waxed paper. Refrigerate overnight. Before serving, remove from waxed paper and place on a serving dish. Bring to room temperature and sprinkle heavily with paprika. Serve with Club or Townhouse crackers.
