  2. 1 tbsp. olive oil

  3. 1 1/2 lb boneless skinless chicken breast, cut into small cubes

  4. 1/4 Cup chopped onion

  5. 1 cup chicken broth

  6. 1 can (4 oz.) chopped green chilies

  7. 1 can (19 oz.) white kidney beans (I use S&W white beans), undrained

  8. 2 green onions, sliced

  9. Southwest Spice Blend

  10. 1 tsp. garlic powder

  11. 1 tsp. ground cumin

  12. 1/2 tsp. oregano leaves

  13. 1/2 tsp. cilantro leaves

  14. 1/8 tsp. ground red pepper

  15. 1. Heat oil in large saucepan over medium-high heat. Add chicken and onions; cook 4-5 minutes.

  16. 2. Stir in broth, green chilies and spice blend; simmer 15 min.

  17. 3. Stir in Beans. Simmer 5 min. Top with onions. Garnish with Monterey Jack cheese.
