  7. 1/3 c Finely chopped cilantro

  8. 2 tb Tahini

  9. 2 tb Miso

  10. 1 t Dark sesame oil

  11. 3 tb Orange juice

  12. 1/2 ts Red pepper flakes

  13. 2 Green onions, finely chopped

  14. 1/2 Red bell pepper, minced

  15. 4 c Cooked udon or soba noodles

  16. -drained, rinsed and drained

  18. This can be prepared a day ahead. The bit of tahini

  19. (sesame paste) creates a creamy sauce that contrasts

  20. well with the crisp vegetables.

  21. In a large bowl, combine cilantro, tahini, miso, oil,

  22. orange juice, and red pepper flakes. Toss in green

  23. onions, bell pepper and noodles.

  24. Cover bowl with plastic wrap, and chill 3 hours or over- night. Serve cold.
