  1. 1 box(es) (8 oz) red beans and rice mix

  2. 1 teaspoon(s) olive oil

  3. 2 bell peppers , cut bite-size

  4. 4 (from a 14-oz pkg)

  5. fully cooked spicy beef sausages , sliced

  6. Sliced scallions

  1. Bring 3 1⁄2 cups water to a boil in a large saucepan. Add rice mix, reduce heat, cover and simmer 10 minutes.

  2. Meanwhile heat the oil in a large nonstick skillet over medium-high heat. Add peppers; sauté 5 minutes or until lightly charred in a few places. Add sausage; sauté 3 minutes or until lightly browned.

  3. Place mixture on rice (don't stir), cover and simmer 10 minutes until rice is tender. Stir to mix; sprinkle with scallions, if using.
