  2. 1/3 Cup butter or margarine

  3. 1/2 Cup onion -- chopped

  4. 1/2 Cup peas -- fresh or frozen

  5. 1/2 Cup green pepper -- chopped

  6. 1/2 Cup celery -- chopped

  7. 2 Tablespoons parsley -- chopped

  8. 5 Whole eggs -- beaten

  9. 1/2 Teaspoon salt

  10. 1/4 Teaspoon pepper

  11. 2 Cups mashed potatoes

  1. Place butter, onions, peas, green pepper, celery and parsley in a 2 quartcasserole. Cover. Microwave at high (100%) until tender crisp, 3 to 4minutes.

  2. Stir eggs into potatoes. Stir in salt and pepper. Add potato mixture tovegetables. Mix well. Cover with wax paper. Microwave at medium high (70%= )

  3. until almost set, 8 to 10 minutes. Let stand 3 to 4 minutes.

  4. Makes 4 servings.
