  1. 1 (2 1/4 teaspoon) package dry yeast

  2. 1/2 cup warm water (100 to 110 degrees)

  3. 5 cups all-purpose flour

  4. 1/4 cup sugar

  5. 1 teaspoon baking powder

  6. 1 teaspoon baking soda

  7. 1 teaspoon salt

  8. 1/2 cup vegetable shortening

  9. 2 cups low-fat buttermilk

  10. 1 tablespoon butter , melted

  11. cooking spray

  1. Dissolve the yeast in 1/2 cup warm water in a small bowl, let stand for 5 minutes.

  2. Combine flour, sugar, baking powder, baking soda, and salt in a large bowl.

  3. Cut in shortening with a pastry blender or two knives until mixture resembles coarse meal.

  4. Add yeast mixture and buttermilk to flour mixture; stir until just moist.

  5. Cover and chill 1 hour.

  6. Preheat oven to 450 degrees.

  7. Turn the dough out onto a heavily floured surface; knead lightly 5 times.

  8. Roll dough to a 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter.

  9. Place biscuits on a baking sheet coated with cooking spray.

  10. Brush melted butter over the biscuit tops.

  11. Bake at 450 degrees for 12 minutes or until golden.
