  1. 3 1/2 lbs 1589g / 56oz Canned - vacuum-packed sweet

  2. Potatoes

  3. 1 cup 198g / 7oz Sugar

  4. 1/3 cup 78ml Bourbon

  5. 1/2 cup 99g / 3 1/2oz Butter or margarine

  6. 1/2 teaspoon 2 1/2ml Vanilla extract

  7. 2 cups 474ml Miniature marshmallows

  1. Fresh sweet potatoes, cooked until soft and then peeled, can be substituted for the vacuum packed ones. Don't use drained, canned in syrup as they are too moist.

  2. Preheat oven to 350F.

  3. Put sweet potatoes in a large heavy saucepan and cook over medium heat, stirring frequently, until heated through.

  4. Mash sweet potatoes. Add sugar, bourbon, butter and vanilla; beat until well blended. Turn into a 2-quart, shallow baking dish. Sprinkle marshmallows over top.

  5. Bake, uncovered, 30 minutes, or until marshmallows are golden.
