  1. 1 pie crust

  2. 1 1/2 c. shredded mozarella cheese

  3. 5 Roma or 4 medium tomato es

  4. 1 c. loosely packed fresh basil leaves

  5. 4 cloves garlic

  6. 1/2 c. mayonnaise

  7. 1/4 c. parmesan cheese

  8. tsp. white pepper

  1. Bake crust according to directions. Remove from oven and sprinkle with ½ c. mozzarella cheese. Cool.

  2. Meanwhile, cut tomatoes into wedges and drain on paper towels. Arrange wedges, standing up, in pie shell.

  3. Using food processor or blender, combine garlic and basil until coarsely chopped. Sprinkle over tomatoes. Combine the rest of the mozzarella cheese, mayonnaise, parmesan cheese and pepper. Spoon over pie and even out (some tomatoes may stick up).

  4. Bake at 375° 35 to 40 minutes.
