  1. 1/2 cups uncooked lentils, rinsed, sorted and drained*

  2. 1 Granny Smith apple, cored, peeled and chopped

  3. 1/4 cup golden raisins

  4. 1/4 cup lemon nonfat yogurt

  5. 1 teaspoon curry powder

  6. 1 teaspoon salt

  1. Combine 2 quarts water and lentils in large saucepan; bring to a boil over high heat. Reduce heat to medium-low. Simmer 20 minutes , stirring occasionally.

  2. Stir apple and raisins into saucepan; cook 10 minutes or until lentils are tender. Drain lentil mixture; discard liquid.

  3. Place lentil mixture in large serving bowl; stir in yogurt, curry powder and salt until well blended. Garnish as desired.
