  1. 8 1/2c Unbleached All-purpose Flour

  2. 1 tb Salt

  3. 1 ts Baking Soda

  4. 2 1/4c Vegetable Shortening

  5. 3 tb Baking Powder

  6. 2 ts Cream Of Tartar

  7. 1 1/2c Instant Non Fat Dry Milk

  1. + In a large bowl, sift together all dry ingredients.

  2. Blend well.

  3. With a pastry blender, cut in shortening until evenly distributed.

  4. Mixture will resemble cornmeal in texture.

  5. Put in a large airtight container.

  6. Label and stor in a cool, dry, place.

  7. Use within 10 to 12 weeks.

  8. Makes about 13 cups of Quick Mix.

  9. VARIATION: Use 4 1/4 cups Unbleached All-purpose Flour and 4 1/4 cups Whole-wheat flour instead of 8 1/2 cups Unbleached All-purpose Flour.

  10. Increase baking powder to 5 Tablespoons.
