  2. Title: Cranberry-Nut Bread

  5. 1 c Whole wheat flour;

  6. 2 tb Vegetable oil;

  7. 1 c Unbleached all-purpose flour

  8. 1 Egg;

  9. 1/4 c Sugar;

  10. 1 c Cranberries; frsh/frozen

  11. 1 tb Baking powder; -chopped

  12. 2 ts Orange; rind grated

  13. 1/3 c Raisins;

  14. 1 c Orange juice;

  15. 1/3 c Walnuts; chopped

  16. Combine the flours, sugar, baking powder, and orange rind in a mixing

  17. bowl. Add the remaining ingredients and stir to blend well.

  18. 9 x 5 inch loaf pan. Bake at

  19. 350 F for 45 to

  20. minutes. Cool for 6 minutes before removing from the pan.

  21. Cool thoroughly on a wire rack. Store in a plastic bag or aluminum

  22. foil for at least one day before slicing.
