  1. 1 pack (4-serving size) instant vanilla pudding (ingredients for pudding)

  2. 1 teaspoon Lemon zest

  3. 1 tablespoon Lemon juice

  4. teaspoon Coconut or almond extract

  5. 1 can (8 oz.) pineapple tidbits in juice; drained

  6. 1 cup Assorted sliced fresh fruit

  7. cup Mini marshmallows or flaked coconut

  1. Notes: By Patricia A. Miller, Lehighton. The Times News, PA Make pudding according to package directions in bowl. Stir in lemon zest, lemon juice and coconut extract. Reserve ¼ cup pudding for topping. Spoon remaining pudding equally into dessert bowls. Combine remaining ingredients in bowl. Spoon on top of pudding. Top with reserved pudding. Makes 4 servings.
