  1. 1/3 c Yellow cornmeal

  2. 1 c All-purpose flour

  3. 1 ts Salt

  4. 2 ts Baking powder

  5. 1 Egg

  6. 1 1/4 c Milk

  7. 1 tb Bacon fat; melted

  8. 2 Strips bacon; cooked and -

  1. - crumbled Mix cornmeal, flour, salt and baking powder. In a separate bowl, beat the egg. Add milk and then bacon fat. Stir this mixture slowly into the dry ingredients, mixing well. The batter should be fairly thin; add more milk if necessary. Mix in crumbled bacon. Cook pancakes in a skillet or on a griddle. From: Cinnamon Mornings.
