  1. Honey Mint Carrots

  2. Servings: 6 servings

  3. 6 medium carrots, scrubbed well

  4. 1 tablespoon honey

  5. 2 tablespoons fresh mint, chopped, or 1 teaspoon dried mint leaves

  6. 1 inch water to boiling in 12-inch skillet. Add carrots and reheat until water boils. Reduce heat; cover skillet and simmer

  7. mixture for 10 minutes or until tender-crisp. Drain carrots well

  8. and toss with honey and mint.
