  1. 1/2 cup 118ml Olive oil

  2. Garlic cloves - chopped fine

  3. 1 lb 454g / 16oz Dry pasta - cooked/drained

  4. 1/2 cup 118ml Parmesan - freshly grated

  5. 1/2 cup 73g / 2.6oz Mizithra cheese - fresh grated

  6. Salt and pepper to taste

  7. 1/4 cup 36g / 1 1/3oz Parsley - chopped for garnish

  1. Bring the water for the pasta to boil and prepare everything else. It's important to never overcook pasta. Heat the olive oil in a small frying pan and add the chopped garlic. Saute for just a moment and set aside. Boil the pasta until just barely tender. Drain and toss with all ingredients. Serve as a side dish in the place of another starch.
