  1. 1 tablespoon 15ml Fresh lemon juice

  2. 1 teaspoon 5ml Dijon-style mustard

  3. Salt - to taste

  4. Freshly-ground black pepper - to taste

  5. 4 tablespoons 60ml Olive oil

  6. 5 cups 200g / 7.1oz Arugula leaves - trimmed, washed, dried and chilled

  7. 1 Peeled red onion - cut very thin rings, (small) soaked in ice water

  8. 15 minutes

  9. 1/2 cup 73g / 2.6oz Shaved Parmesan cheese

  1. In a large bowl whisk together the lemon juice and mustard, seasoning with salt and pepper to taste. Drain the red onion and pat dry. Just prior to serving the salad, add the arugula and red onion to the dressing and toss to coat.

  2. Taste and adjust seasoning with additional lemon juice, salt and pepper if necessary. Sprinkle the salad with the shaved Parmesan and serve immediately.
